Plan a visit to Mosto Vinho, select the wine and the kind of fermentation process you are going to use. Wine varieties can vary from light to fruit flavoured. You can create great tasting wines such as Pinot Grigio, Chardonnay, Riesling, or reds such as Merlot and Shiraz.
A large 'Carboy' glass vessel is prepared for you to contain 23L of wine, enough to produce for you 30, 750ml bottles of wine. You can then mix your contents into the large vessel and start the key fermentation process by sprinkling the yeast into the juice. This takes 5-10 minutes.
Fermentation is now in process. During the next six to twelve weeks, Michael will take care of the clearing and filtering of the wine, the same process performed at a standard winery.
Return to the store after six to twelve weeks for bottling.
This is the moment to bottle your own wine! Your bottles can now be filled from the 23L 'Carboy' vessel - takes approximately 5-20 minutes to fill 30 bottles.
Corking takes place with a Corker Machine. It firmly seals the cork to the bottle.
Shrink caps are foil caps, its use is for aesthetic reasons. This process is called "Shrink Capping".
The labels are either branded from the company or you can customize your own, ie 'Your Own Estate 2008' or use it to mark a special occasion, bridal shower, weddings, anniversaries. It's now time to savour and debut your new wine!
